Fermentation Equipment & Flavor Ingredients Checklist

Before you begin, gather your base chili peppers along with complementary fruits, aromatics, and spices to design a custom flavor profile:

Primary Ingredients

  • Fresh Chili Peppers (50%–80% Base): Fresh, unpasteurized produce (Habanero, Jalapeño, Ghost Pepper, Cayenne).
  • Non-Iodized Salt: Sea salt, Kosher salt, or Pink Himalayan (3.5% concentration by total weight).
  • Filtered Water: Non-chlorinated water (required if using the wet brine method).

Flavor Building Blocks (Non-Pepper Additions)

  • Sweet & Tropical Fruits: Mango, pineapple, peach, passion fruit, blueberries, or green apple. Fermenting strips raw sweetness, leaving bright, complex acidity.
  • Aromatics & Alliums: Garlic cloves, yellow onion, shallots, scallions, or fresh ginger. Develops rich, savory umami depth during aging.
  • Earthy & Sweet Vegetables: Carrots, roasted beets, sweet potatoes, or bell peppers. Carrots and beets add natural body, color, and smooth texture.
  • Herbs, Spices & Wood: Whole black peppercorns, cumin seeds, mustard seeds, fresh cilantro, hibiscus flowers, or toasted oak chips.

  • Digital Kitchen Scale: Precision scale (in grams) for accurate salt calculations.
  • Glass Mason Jar: Wide-mouth glass vessel or food-grade fermentation crock.
  • Fermentation Airlock: One-way valve lid (or silicone nipple airlock) to vent CO₂.
  • Fermentation Weight: Glass weight or water bag to keep peppers submerged.
  • High-Speed Blender: For pureeing the fermented mash into a smooth sauce.
  • Digital pH Meter or Strips: Critical for confirming safe acidity (pH < 4.6).
Pro Tip — Sugar vs. Sweetness in Hot Sauce:
When you ferment fruit with your peppers, bacteria eat the fruit sugars, transforming them into lactic acid. The sauce won't taste sugary-sweet; instead, it adopts a rich, tart, fruit-forward aroma. If you want a sweet & spicy hot sauce, blend fresh fruit into your sauce after fermentation is complete, and pasteurize the bottle at 180°F (82°C) for 10 minutes to stop active yeast and prevent exploding bottles!

Pepper Selection & Wild Microbe Prep

Lacto-fermentation relies on beneficial wild bacteria—primarily Lactobacillus—that naturally live on the skins of fresh, raw chili peppers and produce. When preparing your ingredients:

  • Use Fresh Produce: Rinse dirt with cold water, but avoid chlorinated water or anti-bacterial washes that kill native microbes.
  • De-stem & Dice: Remove green stems to prevent bitter, grassy off-flavors. Rough-chop peppers, fruits, and aromatics to expose surface area to the salt.

Method Selection: Wet Brine vs. Dry Salt Mash

Before adding salt, choose how you want to extract moisture and protect your produce during fermentation:

  • Wet Brine Fermentation (Best for Beginners & Thinner Sauces): Submerging chopped ingredients in a saltwater bath. The liquid acts as an instant oxygen barrier, making it easier to prevent mold while producing a bright, tangy sauce.
  • Dry Salt Mash Fermentation (Best for Deep Umami & Thicker Sauces): Blending peppers and ingredients into a thick pulp and mixing salt directly into the mash (like Tabasco or Louisiana-style ferments). Salt pulls juices out of the produce to create its own brine.

Creating the Saline Shield (The 3.5% Salt Ratio)

Salt is the referee of fermentation. It suppresses bad bacteria, rot, and mold while creating a thriving environment for salt-tolerant lactic acid bacteria.

The Freaky Golden Ratio: Aim for a 3.5% salt concentration calculated by weight in grams:
  • For Wet Brine: (Weight of Water + Weight of All Ingredients in grams) × 0.035 = Salt needed (g).
  • For Dry Mash: (Weight of Total Mash in grams) × 0.035 = Salt needed (g).
Always use non-iodized sea salt or kosher salt (iodine inhibits bacterial growth).

Anaerobic Fermentation (Keep It Submerged)

Lactobacillus bacteria thrive in oxygen-free (anaerobic) environments. Mold and Kahm yeast need oxygen to grow.

  • Submerge All Solids: Use fermentation glass weights or brine bags to keep every pepper floating below the liquid line.
  • For a Mash: A small sprinkle of salt on the cap or top of the ferment will help.
  • Seal with an Airlock: Use a one-way airlock lid to let carbon dioxide (CO₂) escape without letting fresh oxygen inside.

Monitoring, Aging & pH Control

Over 7 to 30 days, bacteria feed on natural sugars, releasing CO₂ (visible active bubbling) and lactic acid. This acid drops the pH level of the mash. Depending on your taste we recommend playing with different time intervals.

Food Safety Benchmark: A fermented hot sauce is shelf-stable when the pH drops below 4.6 (at Freaky Ferments, we aim for 3.4 to 3.8 for optimal tang and longevity).

Blending, Straining & Finishing

Once the ferment reaches its peak flavor and acidity, separate the solids from the liquid brine (if using a wet ferment). Blend the peppers on high speed, gradually adding reserved brine back in to reach your desired consistency. You can even sieve the solids through a mesh strainer for a silky smooth sauce!

Optional: Add a splash of raw apple cider vinegar for secondary acidity, or xanthan gum (0.1% by weight) to prevent separation in the bottle.
